This meat is from one of our "out of program" animals. This beef had to be treated during its lifetime requiring a dose of antibiotics. All animals are healthy at time of slaughter, and have long passed the needed withdrawal time for all the medication to leave the animal's body and tissues.
Skirt Steak - $6.50/lb
Tender outside skirt steak cut from the bottom of the ribs. Comes boneless. Perfect cut for Philly Steak sandwiches or Fajitas! This cut cooks quickly. For best results cook to medium and slice thin against the grain. 1 large steak per package that weighs 1-4 pounds.
Tri Tip Steak - $9.50/lb
Large thick flavorful marbled cut of steak. This triangle shaped lean steak is from the bottom of the sirloin. Perfect for sharing. Best cooked slow. Slice it against the grain to ensure the meat is tender. Package contains 1 large 2-6 pound steak.
KC Strip Steak - $18.50/lb
1.5" thick high quality steak. With a bit of marbling this steak has excellent flavor and is a favorite of meat lovers. Most packages contain 2 steaks and weigh 1-4 pounds total.
Filet - $22.50/lb
Tender and flavorful steak. This small steak is a very tender cut that is highly prized! Most packages contain 2 steaks and weigh 1-3 pounds total.
Ribeye Steak Bone-In - $21.50/lb
1.5" bone in steak cut from the rib area. High in flavor and the bone helps retain moisture during cooking. Most packages contain 2 steaks and weight 1-5 pounds total.
T-Bone Steak - $23.50/lb
1.5" thick steak made up of the KC Strip and the Filet cut from the short loin. Excellent flavor and fat marbling. If you need a steak for a special occasion to impress- THIS is it! Package generally contains 2 steaks.

Approximately 6-8 beef short ribs per package. Comes with bone in. This cut of meat is full of beefy flavor like a chuck roast, but marbling like a rib steak. Will stay moist during cooking.

0.9-2.4 pounds of 90/10 lean ground beef
Soup Bones - $4.00/lb
