Yes! The answer to all three names! The Strip Steak is a tender portion of steak from the short loin on the cow. This is just in front of the tenderloin on the back area. It is full of natural marbling and one side is lined with a thick portion of fat. When sold as a strip steak it is cut away from the T-bone to make it boneless. At AH Farms we choose to use the name KC Strip Steak. Why? Beause we are located just south of Kansas City! Kansas City (Missouri and Kansas) has a rich heritage of growing beef! The Kansas City Stockyards were used by the entire Western half of the United States for shipping beef cattle. It was a HUGE shipping hub. These stockyards held, sold, and transported cattle and other livestock from 1871 to 1991. Why Kansas City? This location was near major river and railroad hubs and centrally located. Beef could easily be loaded on to ships, river barges, and rail cars and quickly shipped all over the United States and Internationally.
